Professor Eleni P. Kalogianni, Group head Eleni P. Kalogianni is Professor in the Department of Food Science and Technology, School of Geosciences, International Hellenic University (I.H.U.). She is member of the permanent academic personnel of the Department since 2009. Since 2011 she is head of the laboratory of the Technology and Quality Control of Olive Oil, Oils and Fats and since 2014 of the OLIE group. Since 2021 she is head of the Department of Food Science and Technology. She specializes in food science and technology with a specific focus on the processing and characterization of lipid systems, first material and products and on the study of multiphase systems and of interfacial properties. She has a research experience of 20 years and has been the coordinator/head of a series of competitive research projects funded by Greek, European and private grants. In 2023 she is coordinating 5 research projects which focus on the extraction technology and characterization of lipids issuing from non-conventional resources and on the technology and on the modeling and characterization of emulsions. She is the owner and inventor on one USPTO Patent. She has 50 publications in peer-reviewed SCI indexed scientific journals (Scopus h-index:16) and over 80 presentations in peer-reviewed international and national conferences. She is a reviewer in 13 scientific journals indexed by SCI. She has organized/chaired scientific conferences and one-day seminars. In 2024 she is the chair of the 19th Food Colloids Conferences. In 2022 she was a member of the organizing committee of the 51st Conference of the German Colloid Society. In 2021 she was a member of the organizing committee of the 35th Conference of the European Colloid and Interface Society and of the conference of the Greek Lipid Forum in collaboration with the European Federation for the Science and Technology of Lipids. She is a board member of the European Federation for the Science and Technology of Lipids and national representative to the same organization. She has been a member of the Research Committee plenary of her university in the period 2018-2022. She has served as an academic director of the Quality Office of her univeristy for 4 years. She represents I.H.U. in the Greek Technological Platform “Food for Life” (member of the European Platform) and coordinates the working group “Sustainable food production” under the aegis of the Federation of Hellenic Food Industries. Dr. Despoina Georgiou Dipl. Chemical Engineer, MSc. in Nanosciences & Nanotechnologies Despoina Georgiou is a postdoctoral researcher at the Department of Food Science and Technology of the International Hellenic University. She received her PhD from the Physics Department of the Aristotle University of Thessaloniki (2012) and has more than 15 years research experience. She has participated successfully in 5 EU, 8 National and 8 Industrial R&D projects. Her research interests include (a) the study of capillary penetration into micro/nano porous media, (b) the development of inorganic and hybrid materials by wet, printing, and vacuum techniques for the encapsulation and packaging of food, pharmaceutical and electronic products, (c) the development and optimization of processes for the extraction of oils and bioactive compounds (d) the characterization of oils properties and (e) the determination of dynamic interfacial tension at water/air and water/oil interfaces. Dr. Ioannis Tsamesidis Ioannis Tsamesidis is a postdoctoral researcher at the Department of Food Science and Technology of the International Hellenic University. He received his PhD in Biomolecular Medicine with excellent (Doctoris Europeus) from the University of Verona, Dept. of Medicine (2018) and has more than 8 years research experience. He has participated successfully in 4 EU and 2 National projects. He has also received a scholarship from Europe union (ESPA) for postdoctoral research. His research interests include (a) oxidative stress techniques: Estimation of oxidative stress under different pathological conditions and pretreatment with natural compounds, (b) cell Biology: Expertise in isolation of cells from tissues and cultivation, (c) Nanotechnology: cytotoxic evaluation of cells with bioactive Nanomaterials and (d) oils and bioactive compounds extraction by enzymatic processes. Mr Aggelos Charisis Agricultural scientist, PhD candidate Aggelos Charisis is a PhD candidate at the Department of Food Science and Technology of the International Hellenic University. He received his Diploma in Agriculture Science and his integrated MSc in Food Science and Technology from School of Agriculture, of Aristotle University of Thessaloniki (2020) and is currently finalizing his MSc in “Quality Management and Production Organization Systems for the Food Industry” in the Department of Food Science and Technology of the International Hellenic University. His research interests include (a) determination of dynamic interfacial tension and interfacial 2D rheological properties, (b) morphological characterization of materials using Confocal Laser Scanning Microscopy (c) determination of various physicochemical properties of foods (d) determination of oxidative products with High Performance Liquid Chromatography and Gas Chromatography (e) determination of particle size distribution using laser diffraction and time obscuration. Mrs Paraskevi Tzika Agricultural scientist, PhD candidate Paraskevi Tzika is a PhD researcher since 07/2022 at the Department of Food Science and Technology of the International Hellenic University. She received her Diploma in Agricultural Science, specialized in Food Science and Technology, of Aristotle University of Thessaloniki (2012), her MSc in Biotechnology – Quality Assessment in Nutrition and the Environment (2015) and has more than 6 years of experience in food industry as quality Assurance supervisor and Consultant. Her research interests include (a) new product development (b) quality assessment and quality control of food (c) enzymatic activity of bacteria in food products (d) antimicrobial activity of foods (e) infectious activity of bacteria, (f) extraction lipids from fish byproducts and sustainable production of biofuels.
